I hardly use/carry any of my Palms with me any more but I always keep
my Palm T|X loaded/updated just in case I need to run.  8^°

I also have a complete (mint) Palm IIIe setup (AAA battery fueled) in
a box.

It is my go-to backup should everything Palm goes awry.

The jpilot version I run is 1.8.2, downloaded from the Devuan Beowulf

I use it on a daily basis and works as expected, no serious issues I
can think of at the moment.

Attempting to install newer versions (but not available from the
Devuan Chimaera or Daedalus repositories) generated a number of issues in the UI, so I
rolled back and stayed there since Devuan Beowulf.

I would like to test it in this box but I would want to roll back
immediately if there are problems with the UI.

What would be the best way to go about this?

I could be that those problems are related to GTK2 being deprecated
I understand that there are people attemting to revive it to keep it
relevand and usable.

You'd have to uninstall the old jpilot, pilot-link and related packages and install the new ones. If you have copies of the old packages (make sure they are still at the Devuan Beowulf repository) it should be fairly safe. There shouldn't be any dependencies on systemd.

If I were you and wanting to do this my main goal would be to get on the current code base more than helping testing.

I was NOT happy at all migrating jpilot to GTK3. Thankfully I had a lot of help, but jpilot was rock solid in GTK2 and during porting we introduced quite a few bugs. I think they are all fixed now.

I have a cloned system drive to use as a test bed where I could do that without issues to my
main system and copies of the packages of the running jpilot installation are in the Beowulf
repository.

As a Devuan user, to me that is essential.

Let's see how I fare with the new installation.
Pity you don't have an upstream maintainer, things would be much easier.
